💞 Korean Rice Paper Tteokbokki (3-4 servings)

💓 Ingredients: vegetables of your choice (2-3 spring/green onions sliced, 1-2 onions sliced, enoki mushrooms), sauce (3 garlic cloves diced, 1-2 tbsp gochujang red pepper paste, 1 tbsp soy sauce, 1 tbsp sugar, 1-2 tbsp Samyang buldak sauce/any hot sauce/korean red pepper flakes, black pepper to taste), rice paper, cheese (mozzarella is best), potato starch/corn starch, water
💗 Method: Prep and cut your vegetables, mix sauce ingredients together in a bowl then put both in a pan of water and bring to a boil. Once boiling, make a starch slurry by dissolving the powder into some water then pour that into the water (more or less depending on how thick you want it). To make the rice paper rice cakes dampen rice paper in water, layer on top of each other (I did 2 layers per rice cake), roll up tightly then cut into desired size and add to the sauce, they only take 2-3 mins to cook. Turn off the heat, cover and melt the cheese on top using the residual heat, garnish with more spring onions and serve!
